Spicy Dry Rubbed Chicken Wings

Ingredients

  • 2-3 lbs Chicken Wings broken down if whole, tips removed
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp ancho chile powder
  • 1/2 tsp chipotle chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper omit if you don't want it extra spicy
  • Cooking Spray

Instructions

  • Breakdown chicken wings if they aren't portioned already.
  • Place a cooling rack on top of a baking sheet.
  • Pat the wings dry and place on cooling rack on baking sheet
  • Let air dry in the fridge for 1-2 hours.
  • While the wings are drying combine all spices in a small bowl.
  • Stir to mix evenly.
  • Once the chicken is dried preheat oven to 400 degrees.
  • Take chicken out of fridge and place in a bowl.
  • Add the seasonings and mix together to make sure each wing is evenly coated.
  • Wash the pan/cooling rack.
  • Spray the cooling rack and place chicken back on
  • Cook in oven for 20 minutes.
  • Remove from oven and flip chicken
  • Place back in over for 15-20 minutes.
  • Serve with your favorite ranch or buffalo sauce!

Notes

Depending on the amount of chicken wings you have you might need to double the spice mixture.
